about the job
This is a high-visibility leadership role for a hands-on culinary expert. You will oversee the heartbeat of the central kitchen, ensuring that tens of thousands of meals daily meet rigorous quality and safety standards.
- Production Mastery: Oversee end-to-end operations for both Halal and Non-Halal lines.
- The "General" in the Trenches: While you manage the strategy, you aren't afraid to step onto the line, fill a shift, and lead your team by example during peak periods.
- Creative R&D: Propose innovative menus for major government tenders and develop fresh dining concepts for our growing retail footprint.
- Commercial Acumen: Manage labor costs, material forecasting, and standard costing to ensure our "Mega-Kitchen" remains a model of efficiency.
about the manager/team
You will lead a disciplined team of Sous Chefs and Cooks. The culture here is fast-paced, industrial, and highly collaborative. This is a team that values resilience over ego, we are looking for a leader who treats their junior cooks with respect and is willing to "shoulder the load" alongside them when the pressure is on.
skills and experience required
- Minimum 9-10 years of experience in a large-scale F&B environment (Central Kitchens, Airline Catering, or Institutional Catering experience is highly preferred).
- Deep familiarity with Cook-Chill/Cook-Freeze processes and the local foodservice landscape.
- A proven track record of managing large teams with a willingness to work rotating shifts and perform hands-on cooking when required.
- Strong knowledge of HACCP, SFA regulations, and Halal certification requirements.
- Possession of own transport is strongly preferred due to shift timings.
- Ability to manage P&L, material forecasting, and high-profile tender submissions.
